  • cup 40g unsweetened cocoa powder
  • ½ cup 65g all-purpose flour
  • ¼ teaspoon salt

Chocolate Mousse Layer
  • cups 350ml cold heavy cream
  • 8 oz 225g semisweet chocolate, finely chopped
  • 3 tablespoons milk
  • 2 tablespoons powdered sugar
Ganache Topping
  • 4 oz 115g semisweet chocolate, finely chopped
  • ½ cup 120ml heavy cream

Method
 

    1. Get the Pan Ready

    Heat the oven to 350°F (175°C). Line an 8-inch square baking tin with parchment paper, leaving extra paper hanging over the edges so you can lift the dessert out later.

    2. Mix the Brownie Base

    In a large bowl, combine melted butter and sugar until glossy. Add the eggs and vanilla, then whisk until the mixture turns smooth and slightly thick.
    Add cocoa powder, flour, salt, and baking powder. Fold gently with a spatula just until combined. Avoid overworking the batter to keep the brownies tender.
    Spread the batter evenly in the prepared pan. Bake for 20–25 minutes. The center should show a few moist crumbs when tested with a toothpick. Cool completely in the pan.

    3. Prepare the Chocolate Mousse
