Ingredients
  

  • 8 large eggs
  • ¼ cup heavy cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
  • ¾ cup bacon bits real bacon pieces
  • 6 English muffins split in half
  • ½ cup chili sauce such as Heinz
  • cups shredded mozzarella and cheddar blend

Method
 

    1. Prepare the Eggs

    Crack the eggs into a mixing bowl. Pour in the heavy cream and whisk until the mixture looks smooth and fully combined. Season with salt, pepper, and onion powder, then whisk again to distribute the spices evenly.

    2. Cook the Filling

    Heat a nonstick skillet over medium heat. Pour in the egg mixture and let it begin to set. Using a spatula, gently stir and fold the eggs as they cook to create soft scrambled eggs. Once they’re fully cooked and no liquid remains, stir in the bacon pieces. Remove the skillet from the heat.

    3. Prep the Muffins

    Arrange the halved English muffins cut-side up on a baking sheet. Spread a thin layer of chili sauce over each half.

    4. Assemble

    Spoon the scrambled egg and bacon mixture evenly over the prepared muffins. Sprinkle the shredded cheese generously on top. For extra flavor, add a little more bacon over the cheese.

    5. Bake

    Place the baking sheet in a preheated oven at 375°F (190°C). Bake until the cheese melts completely and turns bubbly, about 8–10 minutes.
    Serve warm and enjoy these mini breakfast pizzas fresh from the oven.
