Ingredients
  

  • 8 oz elbow macaroni about 2 1/2 cups uncooked
  • 6 hard-boiled eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion finely chopped
  • 2 celery stalks diced
  • 1 –2 tablespoons fresh chives chopped
  • 1/2 teaspoon paprika plus extra for garnish
  • Sea salt to taste

Method
 

    1. Cook the PastaBring a pot of salted water to a boil and cook the macaroni according to package directions until tender. Drain, rinse under cool water, and transfer to a large mixing bowl to cool.
    2. Prepare the EggsSlice the hard-boiled eggs in half. Remove the yolks and place them in a separate bowl. Chop the egg whites into small pieces and add them to the pasta.
    3. Make the Creamy DressingUse a fork to mash the yolks until smooth. Mix in the Greek yogurt, mayonnaise, and Dijon mustard until creamy and well blended.
    4. Combine EverythingAdd the chopped onion and celery to the pasta mixture. Pour in the yolk dressing and stir until everything is evenly coated.
    5. Finish & ChillSprinkle with chives, paprika, and salt to taste. You can serve it right away, but it tastes best after chilling in the fridge for at least 1 hour.
