To prepare these festive Easter cookies, gather the following ingredients:

Method
 

    Step 1: Prepare the Dough

    Start by placing the butter and sugar into a stand mixer bowl. Beat them together at medium speed for about 2 minutes, until the mixture becomes light and creamy.
    Add the egg and vanilla extract, then mix again until fully blended.
    Lower the mixer speed and stir in the baking powder and salt. Gradually add the flour and continue mixing until the ingredients combine and a soft dough forms.
    Wrap the dough tightly in plastic wrap. Chill it in the refrigerator for at least 1 hour (or overnight), or place it in the freezer for about 30 minutes to firm up.

    Step 2: Shape the Cookies

    Remove the chilled dough and let it sit at room temperature for about 5 minutes so it’s easier to roll.
    Roll the dough out on a lightly floured surface until it reaches roughly ¼-inch thickness.
    Use an egg-shaped cookie cutter (or any festive shape you like) to cut out the cookies. Place them onto a baking sheet lined with parchment paper.

    Step 3: Bake

    Bake the cookies in a 350°F (175°C) oven for 8–10 minutes, or until the edges look set.
    Transfer the cookies to a wire rack and allow them to cool completely before decorating.

How to Make Royal Icing

In a mixing bowl, combine the meringue powder and powdered sugar. Add the vanilla extract and water, then beat the mixture at medium-high speed until smooth and fluffy.
Divide the icing if you want multiple colors. Add gel food coloring and mix until the colors are evenly blended.
Spoon the icing into piping bags and decorate the cooled cookies however you like.
