  • 3 cups plain Greek yogurt
  • 3 cups granulated sugar
  • 9 large eggs
  • 4 ½ teaspoons almond extract
  • 1 ½ cups vegetable oil
  • 3 cups fresh strawberries chopped
Strawberry Glaze:
  • 1 ½ cups mashed strawberries
  • 6 cups powdered sugar

Method
 

    Begin by heating your oven to 350°F (175°C). Lightly grease an 8–9 inch loaf pan with nonstick spray and set it aside.
    In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined.
    In a large mixing bowl, blend the Greek yogurt, sugar, eggs, almond extract, and oil until smooth and creamy. Gradually add the dry ingredients into the wet mixture, stirring gently until everything is just combined—don’t overmix.
    Carefully fold in the diced strawberries, distributing them evenly throughout the batter. Pour the mixture into your prepared loaf pan and smooth the top.
    Bake for approximately 50 minutes, or until the center is fully set and a toothpick inserted comes out clean.
    Let the cake rest in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
    While the cake cools, prepare the glaze by mixing the mashed strawberries with powdered sugar until smooth and pourable.
