Method
 

    1. Prep the Oven & Pan

    Set your oven to 450°F (230°C). Lightly grease a 9-inch round pan with butter or cooking spray.

    2. Prepare the Strawberries

    Pick out a handful of the best-looking berries and keep them aside for garnish.Slice the rest into chunks, toss with sugar, and gently mash a bit to release juices. Let them sit while you prep everything else.

    3. Whip the Cream

    In a chilled bowl, beat the heavy cream with powdered sugar until it forms soft peaks. It should hold shape but still look smooth and airy. Set aside in the fridge.

    4. Make the Shortcake Batter

    In a mixing bowl, combine sugar, flour, shortening, milk, egg, baking powder, lemon zest, and salt.Mix until a soft, slightly thick batter forms.

    5. Bake

    Spread the batter evenly into your prepared pan.Bake for about 15 minutes or until the top turns golden.
