For the Dressing / Marinade
  • 1 tablespoon dried basil or about 3 tablespoons chopped fresh basil
  • 1 tablespoon dried oregano
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar preferably aged for deeper flavor
  • A small pinch of salt
  • A small pinch of black pepper
For the Salad
  • 1 cucumber peeled and cut into small ½-inch cubes
  • cups cherry tomatoes cut into quarters
  • ½ large red onion finely diced
  • 8 ounces fresh mozzarella cut into bite-size pieces or halved mini balls
  • Optional: fresh basil leaves for garnish

Method
 

    1. Mix the Dressing

    Start by preparing the simple vinaigrette. In a small bowl, combine the olive oil, balsamic vinegar, oregano, basil, salt, and pepper. Whisk or stir until the mixture looks well blended. Set the dressing aside for a few minutes so the herbs can release their flavor.

    2. Prepare the Cucumber

    Wash the cucumber and remove the peel. Lightly drag a fork along the outside to create ridges—this helps the dressing cling to the cucumber pieces. Slice it into thin rounds, then cut those slices into small cubes. Transfer the cucumber to a medium mixing bowl.

    3. Add Tomatoes and Onion

    Next, cut the cherry tomatoes into quarters so they’re easier to eat and add them to the bowl with the cucumber. Finely chop the red onion and mix it in as well. If you prefer a milder salad, you can reduce the onion or skip it entirely.

    4. Add the Mozzarella

    Cut the fresh mozzarella into small bite-sized chunks, or simply halve the pearl mozzarella balls if using those. Add the cheese to the bowl with the vegetables and gently mix so everything spreads evenly.

    5. Toss and Let the Flavors Develop

    Pour the prepared dressing over the salad mixture. Stir carefully until the cucumbers, tomatoes, onion, and mozzarella are lightly coated.
    Allow the salad to rest for about 10 minutes before serving. This short marinating time helps the ingredients absorb the dressing and blend together for a fresher, more flavorful result.
