  • 6 –8 sprigs fresh thyme leaves removed
  • 1 tablespoon milk
  • Sea salt and freshly cracked black pepper

Method
 

    1. Heat the oven

    Begin by setting your oven to 180°C (350°F). If your oven doesn’t have a fan, increase the temperature slightly to 200°C (390°F).

    2. Prepare the pastry sheets

    Lay the puff pastry sheets flat on a clean work surface. Drizzle one tablespoon of honey across each sheet and spread it lightly to coat the surface.

    3. Add the filling

    Scatter the chopped walnuts, crumbled blue cheese, and grated Parmesan evenly over the pastry sheets. Sprinkle fresh thyme leaves on top and season with a pinch of sea salt and cracked pepper.

    4. Roll and slice

    Starting from one edge, roll each pastry sheet into a tight log. Once rolled, carefully cut each log lengthwise so you have two long strips. If any filling peeks out, gently press the pastry back around it.

    5. Twist and form

    Place the pastry strips onto a sheet of parchment paper. Twist each strip slightly and shape it into a loose spiral or circular coil.

    6. Brush and bake

    Lightly brush the surface of the pastry with milk to help it brown beautifully in the oven. Bake for 25–30 minutes, or until the pastry is puffed, golden, and fully cooked.

    7. Finish and serve
