  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup Bang Bang sauce split into two portions (store-bought or homemade)
For the Fried Rice
  • 2 tablespoons sesame oil divided
  • 4 large eggs lightly beaten
  • ½ teaspoon kosher salt
  • 2 large carrots finely chopped
  • 1 large white onion diced
  • ¼ cup sliced green onions plus extra for garnish
  • 1 teaspoon minced garlic
  • 4 cups cooked and chilled long-grain white rice
  • ¼ cup melted unsalted butter
  • 1 teaspoon lemon juice
  • 2 tablespoons soy sauce
  • cup frozen peas

Method
 

    1. Season and cook the chicken

    Place the cubed chicken in a bowl and coat it with vegetable oil, paprika, garlic powder, salt, and pepper. Mix until each piece is evenly covered in seasoning.Heat your air fryer to 400°F (200°C). Arrange the chicken in a single layer and cook for 11–12 minutes, flipping halfway through, until golden and fully cooked. The internal temperature should reach 165°F. Transfer the chicken to a bowl and cover loosely to keep warm.

    2. Cook the eggs

    Heat 1 tablespoon sesame oil in a large skillet over high heat. Add the beaten eggs and a pinch of salt. Stir gently until soft scrambled curds form. Remove the eggs from the skillet and set them aside.

    3. Sauté the vegetables

    Reduce the heat slightly to medium-high and add the remaining sesame oil to the same skillet. Toss in the diced carrots, onion, and green onions. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften. Add the minced garlic and cook for another minute until fragrant.

    4. Add the rice

    Stir the chilled rice into the skillet with the vegetables. Break up any clumps with a spatula and cook for several minutes until the rice heats through and develops a light crisp in places.

    5. Combine the flavors

    Return the scrambled eggs to the skillet. Add the melted butter, lemon juice, soy sauce, and frozen peas. Stir everything together and cook for 2–3 minutes, allowing the peas to warm and the rice to absorb the flavors.

    6. Finish with Bang Bang chicken

    Toss the cooked chicken with ½ cup Bang Bang sauce until coated. Spoon the fried rice onto plates, top with the saucy chicken, drizzle with extra sauce if desired, and garnish with sliced green onions.
