Ingredients

  • 8 frozen hash brown patties
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 1/2 cups diced ham
  • 2 scallions chopped
  • 9 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard optional, but adds great flavor
  • 1/4 teaspoon garlic powder

Method

    1. Prep the Oven & DishHeat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
    2. Layer the BasePlace the frozen hash brown patties in a single layer across the bottom of the dish. No need to thaw—straight from freezer works fine.
    3. Add the FillingsScatter the shredded cheeses, diced ham, and chopped scallions evenly over the potatoes.
    4. Mix the Egg BaseIn a large bowl, whisk together the eggs, milk, salt, mustard, and garlic powder until smooth and well combined.
    5. AssemblePour the egg mixture evenly over the layered ingredients, making sure everything is coated.
    6. BakeCover the dish with foil and bake for 25 minutes. Then remove the foil and continue baking for another 20 minutes, until the top turns golden and the center is fully set. (Tip: A knife inserted in the middle should come out clean.)
    7. Rest & ServeLet the casserole sit for about 5–10 minutes before slicing. This helps it firm up and makes serving easier.

Notes

Helpful Variations & Tips

  • Switch the potatoes: Try tater tots instead—just add an extra 5–10 minutes to the baking time.
  • Change the protein: Swap ham for cooked sausage or crispy bacon. Want it meatless? Use sautéed veggies like peppers, onions, or mushrooms.
  • Play with cheese: Cheddar and Monterey Jack are classic, but Pepper Jack adds a nice kick if you like a little heat.
