Start by heating your oven to 350°F (175°C). Lightly coat a deep baking dish or pie pan with butter or nonstick spray to prevent sticking.
In a large mixing bowl, toss the sliced strawberries with sugar until they begin to release their natural juices. Add the cornstarch and vanilla extract, then gently mix until the fruit is evenly coated and slightly glossy. Transfer this mixture into your prepared baking dish, spreading it out evenly.
Next, grab another bowl to prepare the crumble. Combine the flour, oats, both sugars, salt, and cinnamon. Pour in the melted butter and mix everything together until you get a coarse, crumbly texture.
Sprinkle the topping evenly over the strawberries, covering the entire surface.
Place the dish in the oven and bake for about 35–40 minutes, or until the strawberries are bubbling around the edges and the topping turns a beautiful golden brown.
Let it cool for a few minutes before serving. Best enjoyed warm with a scoop of vanilla ice cream on top for that perfect sweet finish!
